What makes up the soul of a wine? Or a specific vineyard site? Or a wine region? It’s more than terroir—technically, the soil and climate; it’s that plus the sum total of the perseverance, dedication, commitment and simple trial and error of the people who came together at a specific place and time, with a vision to plant the vineyard and create the wine.
Nicolaus (“Nicky”) and Gaby Hahn found their first vineyards in the late ‘70s in Monterey County. In 1988, sensing the potential of the region, Nicky Hahn advocated a new wine appellation and his pioneering effort ultimately led to the creation of one of the most exciting and highly-lauded U.S. wine appellations today: the Santa Lucia Highlands (SLH).
Hahn Estates now owns 650 SLH vineyard acres that range in elevation from 200 to 1,200 feet. The Hahn SLH wines, which epitomize the appellation as well as the passion and commitment of the Hahn Family, are created from the fruit of these meticulously planted hillside vineyards. These wines are produced completely in the Santa Lucia Highlands—from the ground to the barrel to the bottle—at Hahn Estates Winery.
“The Hahn SLH wines encompass what I believe is the ‘soul’ of not only the soil and climate, but also of the Hahn team,” according to Winemaker Paul Clifton. “The Hahns have surrounded themselves with people all passionate towards one goal: producing a world-class line of SLH wines. Blended in to each of these wines is this team’s signature of passion… buried underneath the layers of aromas and flavors, is a subliminal sense of the many souls involved in growing and making these wines.”
Paul Clifton, Winemaker
Paul Clifton joined the Hahn Estates team in 2003, after finishing a postgraduate degree of Viticulture/Enology in New Zealand. He became involved in winemaking as a hobby and in 1996, decided to make a career change from firefighting to winemaking. Paul built a solid foundation in the industry, starting out in the cellars of Bernardus Winery in Carmel Valley, then moving on to Byington Winery in the Santa Cruz Mountains as assistant winemaker. A native of the Monterey Bay, his passions lie in the beauty of the area, its potential for excellence in winegrowing, and the people he works with.
“When a wine drinker pops the cork and tastes the wine, buried underneath the layers of aromas and flavors is a subliminal sense of the many souls involved in growing and making these wines...” - Paul Clifton

Hahn SLH Estate Syrah Santa Lucia Highlands 2007
This deep ruby Syrah combines strength and grace, opening with aromas of raspberry, black cherry and pepper.
The SLH Syrah was harvested from the Hahn’s Doctor’s Vineyard and the Hook Ranch in the Santa Lucia Highlands. Ideal for growing Syrah, these east-facing slopes are bathed in the sun above the valley fog, while the ocean breezes keep the temperature moderate and allow for a long, cool growing season.
This deep ruby Syrah combines strength and grace, opening with aromas of raspberry, black cherry and pepper. Lush and seductive, its concentrated fruit flavors are complemented by nuances of dark chocolate, espresso, spice, butter and oak. Sturdy yet refined tannins and a velvety mouthfeel lead to an elegant finish.
This wine pairs perfectly with charred meats and hearty stews. Try it with barbecued spareribs, lamb skewers, or a bacon and blue cheese burger served with sweet potato fries.
